Wallcliffe Wines 2025 Cabernet Sauvignon West

Hand-picked, hand-destemmed and naturally fermented, it is gently hand-plunged twice daily to keep tannins fine and soft and the wine fruit-forward.

After 12 days on skins, the wine is basket-pressed into old barrels, where it rests on lees for 11 months before being bottled straight from barrel—unfined, unfiltered and with nothing added. It then takes a four-month lie-down to shake off bottle shock.

A Cabernet with a little patience, a lot of personality and no interest in rushing.
