2024 Halcyon Pinot Noir

100% Pinot Noir sourced from the Halcyon block planted in 1978. The grapes are handpicked and destemmed before being fermented, incorporating a small portion of whole bunches. The fermentation process spans 30 days on skins, followed by gentle pressing in a basket press to extract flavours delicately. The wine then matures for a year in new and seasoned French oak barrels, allowing it to develop complexity and depth while maintaining its elegant character.
